Liquid dairy food containing fish oil and method for producing the same

Abstract

The invention provides a liquid dairy product containing fish oil and a production method thereof. The liquid dairy product contains fish oil of more than 0 weight percent and less than or equal to 0.5 weight percent; and the PH value of the liquid dairy product is between 6.4 and 7.0. The liquid milk product also comprises an antioxidant. Through reasonable formula design, the production method can effectively reduce or eliminate poor flavor influence on the liquid dairy product brought by the addition of the fish oil and provide guarantee for realizing good stability, flavor and mouthfeel of the product in shelf life.
本发明提供了一种含有鱼油的液态乳制品及其生产方法,所述液态乳制品中含有大于0且小于等于0.5wt%的鱼油,且该液态乳制品的pH值为6.4~7.0。该液态乳制品中还进一步包括有抗氧化剂。本发明通过合理的配方设计,能有效减少或消除鱼油的添加对液态乳产品带来的不良风味影响,为实现产品在货架期内的良好稳定性以及良好风味口感提供保障。
